Food Weekend!

Okay, so this weekend, I've decided, is all about food. Breakfast this morning was pancakes and bacon (as shown in Photos). Lunch was going to be seared sea scallops and mushrooms, but they were all out of scallops at the grocery store! :o(

Still trying to deal with the incrediable amount of leftovers from Christmas. Ate a LOT of the cheese, but still had some left, along with a half of a loaf of 9-grain bread (which, if you need that kind of thing, helps in defecation , but for a person like me, means I'd spend the next two days on the toilet!). Since the pumpernickle bread just went bad, I decided I needed to use the 9-grain up quick. so, first cut off the crust and made them into croutons - coating the 1 inch squares with butter, garlic, salt and pepper and parmesan cheese and baking them in the oven for 15 minutes.

Used the food processor to grind them into bread crumbs after they cooled (again, see photos).
Shredded the rest of the cheeses (mostly smoked cheddar) and cut a pocket into three chicken breasts. Stuffed them with the cheese, held them together with toothpicks, dipped them in flour, salt and pepper, then whisked eggs, and then the newly-made bread crumbs.

Fried them in extra virgin olive oil in an oven-proof pan for 3 minutes a side, then put them in the oven (preheated to 325 degrees) for 15 minutes. Again, see photos...
