I baked some chicken breasts in the oven. As the side dish, I tried a recipe I found that used two medium size butternut squash, peeled and cut into 1 inch chunks. You coated them with 6 tablespoons of melted butter, salt and pepper and 1/4 cup of brown sugar. Roasted in a 400 degree oven for 55 minutes until the sugar had caramelized. Probably nothing a diabetic should
be eating, but an unbelievable taste!
