Where have I been?

There was some kind of problem on the Blog side that prevented me from entering text or photos since Monday (which is why Monday's post went through yesterday evening). Since I now work in IT, I understand it completely, but I won't bore you with details.

Anyway, created an interesting side dish tonight. Warmed up a stuffed chicken breast (from Saturday's "Food Weekend"). Needed something to go with it, but was tired of all the normal "stuff," so I roasted some pine nuts (left over from last Summer's pesto concoctions, when I had an abundence of fresh basil in my garden) in a non-stick frying pan until golden brown. BTW, roasting any kind of nuts when used in cooking is recommended, as it brings out the natural oils and more flavor.

Then I added two small onions (chopped), all my leftover portobello mushrooms (sliced) and three cloves of chopped garlic. When that was done sauteing, put it in a pot and added equal amounts of water and rice. Ta, da!

Couldn'd decide on whether to add soy sauce, (which would have been good) but finally figured that, since the stuffed chicken breast was so non-Oriental, I'd just use salt and pepper. Very, very tasty!
