Leftovers...

Ate the last of the leftover chili last night. Because the recipe made so much, I had given half to Jake and Carla. Jake told me he had shredded the cubes of meat after warming it up. So, I tried his trick and shredded all the meat with a fork after it was warm. Yes, I liked it better.

Definitely going to make that again, but this time only using the 3 pounds of pork tenderloin it called for instead of 4 1/2 pounds (smallest pork tenderloin I could find). Been kicking myself ever since! Why didn't I cut off the extra 1 1/2 pounds and freeze it? It would have made just the right size for a nice, one person stuffed pork tenderloin main dish. Ah, well, live and learn...
