So, anyway...

Thursday night, Jake and Carla stopped by. We visited for a while, then I asked them if they had any dinner plans. I had wanted to try a recipe I'd seen for Spiedini, so we went ahead and all made dinner.

Spiedini is basically 3 boneless, skinless chicken breasts cut into 1/4 inch strips. Then you wrap it around 6 ounces of Asiago cheese, cut into chunks. Okay, so I couldn't find Asiago cheese, so I bought Gorgonzola (which is an Italian blue cheese) and secure it with a toothpick. Then you dip it in olive oil and coat it with bread crumbs. Here's where the recipes differs... Some tell you to put it in a shallow baking dish; some tell you to sear it in a frying pan first. Since I like my frying pan, I seared it.

Anyway, into the oven it went. Meanwhile, I made some (boxed) pasta, while Carla made a delicious sauce of olive oil and fresh garlic.

Okay, so I had forgotten the fresh basil (hard to come by, right now) and the onion slices, but it was wonderful!

And the pasta with garlic sauce? To die for!
