I made up for my sloth the last few days on the Fourth of July. Set the alarm and by 7:00 AM, I was shaved, showered and at Meijers, doing last minute grocery shopping for the cook out. I also stopped at Home Depot and got the last two bags of humus/manure I needed. I spread that while the ribs were cooking.
The baby back ribs had been rubbed with brown sugar, seasoned salt, fresh ground black pepper and a little Creole seasoning on Monday and sat in the fridge overnight. At 9:00 AM, I put the ribs on the grille, using mesquite wood for smoke. Every 45 minutes I sprayed them with apple juice. After three hours of that, they got wrapped in tin foil and put back on the grille for two more hours. Then I unwrapped them, slathered them with barbecue sauce and cooked them 30 more minutes.
Jake and Carla came around noon. I had made a dozen hardboiled eggs earlier, as she had a recipe for deviled eggs she wanted to try (this one used bacon in them). So, while she made the deviled eggs, they told me about their anniversary date. Sounds like they had a nice hotel and an excellent dining adventure!
Somehow we got talking about making those blooming onions, and before you know it Jake made two! Excellent appetizer! And, while that was going on, Carla made potato salad.
Put it all on the table and had our dinner! I thought the ribs were a little overdone, but very tasty! Deviled eggs were great and the potato salad, a hit as well.
They cleaned everything up and we sat out on the patio for a while. They left around 4:00 PM. I took an hour nap and then began my night...
It was a very, very good day!
