Weekend Update v1

Jake and Carla stopped by to switch cars. They are off to a fancy hotel to celebrate their anniversary (two years on July 3rd). I did laundry and then took a long anticipated, well-deserved nap!

Woke up and put some chicken thighs (I am still convinced these are the best tasting part of a chicken!) in a citrus marinade (zest and juice of a lemon, a lime and an orange, with 10 sprigs of thyme) and left them in the fridge for an hour. Worked on this and that (filled the bird feeder, folded laundry cut and boiled some redskin potatoes, etc.)

Then, fired up the grille. While the cowboy charcoal was getting ready, made a simple potato salad - cut potatoes, chopped celery, three hardboiled eggs, a diced valadia onion mixed with a sauce (mayo, yellow mustard, milk, salt, fresh ground pepper and a bunch of fresh chopped parsley). Put the chicken thighs skindown (to get some nice grille marks) for a bit and then turned them over. Moved them from"direct heat" to "indirect heat" and let them cook for about 15 minutes. Then took them off and let them rest.

Ate a delicious dinner watching TV. After a bit, I could not ignore the sounds of fireworks, so taped the rest of my TV show and went outside.
