In preparation for Tuesday's garbage day, went and cleaned off my workbench in the garage (l-o-n-g overdue!) Really, the whole garage needs a good cleaning and reorganizing, but I think that's more of a Fall job.
Then checked out the fridge for likely garbage-day candidates. Was being ruthless (you have to be around here. Scruffy won't throw anything away!) then had a long debate with myself about the mashed potatoes left over from Friday. Decided to use them to make one of the few dishes my first wife, Fran, taught me, potato cakes. However, decided to add a little twist to them (need to jazz them up a bit to make them a main dish tonight).
Took half of a medium-sized onion and grated it into the mashed potatoes. Mixed that with a beaten egg and enough flour for the right consistency and fried them in about 1/4 inch of canola oil. A little salt when you first take them out, and bingo! Excellent (see Photos).
Watched some TV, but decided to call it an early night. Was asleep around 10:00 PM.
