- 1 tablespoon extra-virgin olive oil
- 1 tablespoon minced garlic
- 3/4 cup ketchup
- 1/2 cup balsamic vinegar
- 1/3 cup honey
- 1/4 cup soy sauce
- 1/4 cup brewed espresso (I just used cold coffee)
- Pinch salt and freshly ground pepper
- 1 tablespoon orange zest (I didn't have this, so didn't use it!)
Heat the olive oil in a saucepan over medium-low heat. Add the garlic and saute until it is golden. Whisk in the ketchup, vinegar, honey, soy sauce, and espresso (helpful tip - problems getting the honey out of the measuring cup? Add a splash of olive oil first, swirl it around, then add honey. It will come right out!)
Simmer gently for 5 minutes to blend the flavors. Remove from the heat. Season with salt and pepper, to taste and stir in orange zest.
