Well, I did remember my porridge today! I also remembered it was garbage day, so hauled out 4 bags to the road before I left for work.
Got back home and made dinner. I think I broke every dietary and common sense rule with this one. I made one of the old steaks on the two-burner grill pan (no problem yet) but then I made the side dish...
Definitely not diet-food, it was Blue Cheese Spaghetti. The sauce was made by cutting up four strips a bacon into 1 inch strips, cooking them until crisp, then removing them with a slotted spoon and reserving a tablespoon of bacon fat. In that went another tablespoon of olive oil and a pat of butter, then garlic and shallots. When soft I added chicken stock and cream, then 8 ounces of crumbled blue cheese, two tablespoons of fresh chopped sage and the bacon bits. After the blue cheese melted, a pound of al dente spaghetti was added to the pan to get happy.
If you like blue cheese, you'll love this but I'm pretty sure its NOT figure friendly...
Watched my usual Tuesday night shows and went to bed.
I attempted to make a blue cheese pasta dish a few months ago and neither of us were real thrilled with the taste or texture. I didn't add anything to thin it out though (ala your cream) so perhaps that was the problem.
