Wednesday, and starting the trailer...

Beautiful day, so grilling should be involved. Stopped at Farmer Jack's and picked up two yellow squash, two zucchinis and one eggplant.

Got home and changed clothes. Put the last cedar board in some water and took out a salmon filet from the freezer (not a beautiful, big one like I had for Jyl's birthday dinner, but a thin one I get in bulk from Farmer Jack's). So while the board was soaking and the filet was thawing, I hurriedly filled the bird feeder with seed and the squirrel feeder with some peanuts. Then, out to the garage!

I stated assembling the trailer. Remember the guy who said it took him a week? Well, the instructions say it takes three hours. But, now I understand that disparity. Interpreting each step takes an hour, but then doing it takes 15 minutes! Worst instructions I ever tried to follow!! Anyway, by 7:30 PM I had the front half assembled. It was then I noticed that the bar on the tongue for the spare tire was on upside down. Oh, well, I'll fix it later. Time for food!

Lit the charcoal in the grill. Cut the squash and eggplant on the mandoline into long, thin strips. I put them in a bowl and drizzled olive oil and balsamic vinegar on then. Added salt and pepper and tossed them about. Put the salmon on the plank after rubbing it with the potlatch seasoning. Put everything on the grill. I had to keep turning the veggies as they quickly burn (especially the eggplant). I think I pulled them off a bit too soon, because while the eggplant was perfect, the two types of squash were a bit crunchy.

The salmon, too, had a little problem. I put on about the same amount of seasoning I did for the thick filet, but on this thin filet, it was a bit strong. So, I scrapped it off with a butter knife. Much better. (God, I hope the seasoning on Jyl's salmon wasn't too strong and they just didn't tell me!)

Watched a little TV, but tired of it quickly, so went back to my book, then bed.

    I was impressed that you seasoned the fish yourself, and I thought you did a perfect job! Switching the topic to your eggplant, though, have you ever eaten gnocchi with eggplant, spinach, onions, lots and lots of garlic, and a white wine marinara? That’s how I’m dealing with my eggplant addictions these days :)
