Hot today, really hot! Broke the record of 89 degrees F (We hit 90). I had to stop at the Post Office and buy some stamps on the way home, but I did make it home (although slightly damp).
Changed immediately into my workout shorts and T-shirt. I dug out the smoked pork loin, froze half and warmed the other half in the microwave. Then, I shredded it with two forks. BTW, there was a nice smoke ring in the meat (and it tasted fantastic) so I did do some good with my smoking efforts yesterday.
I put the pulled pork in a medium saucepan, added a half a bottle of BBQ sauce and set the burner to simmer (low and slow, low and slow). Next I peeled a nice eggplant, cut it into 3/4 inch slices, dipped each into an egg/milk mixture, then seasoned flour and finally 1/4 inch of Canola oil, heated to 350 degrees in a cast iron skillet. I let them get golden brown on one side, then flipped them with my tongs. I ended up with eight, great eggplant rounds.
I ate two pulled pork sandwiches (on sesame seed hamburger buns) and three slices of eggplant watching taped TV, leaving the cleanup for the morning and made it an early night.
