I slept MUCH better Tuesday night with the heat turned back to 68 degrees F., in case you were wondering.
I needed to give Jake a ride home last night, plus stop and pick up some scallions and four tortillas, so I didn't get home until 6:00 PM.
I changed clothes and started the mid-week wash. Then I took the smaller half of the steak I'd grilled on Sunday and sliced it as thin as I could. It's easier to do this when it's cold, by the way. In fact, if you are trying to do this to raw meat, it's recommended that you put it in the freezer for a tad so it stiffens up.
Next I sliced the scallions on a diagonal, again as thin as I could. Then I mixed up a dressing with mayonnaise, sour cream and horseradish while the steak was heating in the microwave.
I put the dressing on the tortilla (a lot, because I like it!), then piled some steak strips and scallion on one half. Then I rolled it up, cut it in half and had a great tasting, good looking, steak rollup for dinner (well, actually, I had two of them, lol!)
It did seem to be missing something, but I'm not sure what. Maybe a lettuce leaf? Maybe some shredded cheddar cheese? I've got leftovers, so I can play with this one more time.
I glanced at the To Do list, laughed, and then went and watched TV for the rest of the night.

ReplyDeleteI am unfamiliar with the mores and taboos of foodie culture. Are you buying tortillas because you:
A) don’t want to make them yourself because you’re not interested in doing that?
B) didn’t have time to make them yourself?
C) don’t want to breech foodie etiquette?
Just curious.
None of the above. I never even thought about making them myself. Are they hard?
ReplyDeleteNo, they’re easy to make. The only thing that prevents me from making all of my own is that I haven’t figured out a decent recipe to use butter instead of lard of shortening. I was hoping you had a good recipe to share!
