Monday's Beef

I had the opportunity to go home today at lunchtime. So, I thought I'd throw tonight's dinner in the slow cooker. I peeled and sliced four small carrots, cut six redskin potatoes into quarters, peeled a yellow onion (and left it whole) and peeled four cloves of garlic. I topped that with a thawed English blade roast after seasoning it on both sides with Montreal Steak Seasoning. I sprinkled some red onion slices on top the roast and added a few sprigs of fresh rosemary, parsley, thyme and oregano. I added about half a cup of water and turned it on Low. It should be just about perfect when I want to eat!

So, when I arrived home Monday night, I was greeted by the smells of roast beef cooking. I changed my clothes and then started the load of laundry I should have done Sunday night, but didn't. I checked the roast and it was done to perfection. Since it was way too early for me to eat supper, I turned it onto "Warm".

Because tomorrow is garbage day, I emptied and refilled the kitty litter box. This gets its own special bag every two weeks due to weight.

Then I removed the main bathroom's toilet seat. Scruffy had broken it last Friday Night. It was up and he knocked it down walking across the tank to get to the open bathroom window (he likes to lie there and watch the birds eat). Because it was the cheap piece of crap that came with the toilet, it snapped in half. I haven't gotten a replacement yet, but it, too, is going in the trash.

BTW, I forgot to mention it, but we got none of the forecasted rain again today. A nice line of drenching thunderstorms moved across the state, but drifted just southward by the time they got here.

I walked around the back yard some, inspecting gardens. I am not only the gardener here, but also the chief inspector. Then I went in and fixed my dinner. I put the roast on a platter and the drained veggies in a bowl. I got out a skillet and warmed up two tablespoons of butter. Then I whisked a couple of tablespoons of flour into that to make my roux. Once the flour and butter mixture was the color I wanted, I added the juice from the slow cooker, got it boiling and reduced it into a lovely pan gravy.

Slices of roast beef and two spoonfuls of veggies, including the whole onion (my favorite part), all topped with a little gravy and a little more salt and pepper and dinner was served! I ate it watching TV. After watching one taped cooking show, I was bored and tried a movie. But, that didn't hold my interest, either, so I gave up and went to bed at 9:30 pm.
