I had to go out during the day and inspect a job site. Wouldn't you know that was exactly the only time all day that it rained?
By the time I drove home the cold front had moved through, leaving it sunny but cooler (of course, lol!)
Back home, I realized I had absolutely no ambition. I'm not really sure why I didn't feel like doing anything, but I didn't. So, I didn't!
I warmed up the last hamburger for dinner and, after remembering the asparagus I left standing in some water on Saturday, made an delicious, but simple, side dish. I took one piece by each end, bent it until it snapped and trimmed all the rest to that length. I put them in a bowl, added three cloves of minced garlic (You could use less, of course, but I like garlic!) a pinch of kosher salt and a little fresh ground black pepper and drizzled them with olive oil.
I tossed them about a bit and put them on the tinfoil-lined little pan in my toaster oven that I had preheated to 400 degree F. I roasted them for about 10 minutes (or until yours are tender). I plated them and, using the micro-planer, dusted them with just a little Parmigiano-Reggiano. Note: use just a little or you will lose the effect! This is NOT a cheese dish!
An excellent dinner! I cleaned up and wandered off to watch TV for the rest of the night.
