I woke up late on Sunday and started the weekend wash. I warmed up a cup of Saturday's coffee and called that breakfast.
I took out the broiled eggplant halves and let them come to room temperature. When they did, I scooped out all but about 1/2 inch of the inside (think "twice-baked potatoes"). Meanwhile I browned 1/2 pound of bulk sweet Italian sausage. I played with the recipe a tad by adding fine diced onions and minced garlic.
When the sausage was done, I drained the grease and added 1/2 cup of jarred pasta sauce, some shredded mozzarella cheese and the eggplant. I stuffed that back into the eggplant skins, topped it with more mozzarella cheese and baked it in the oven until the cheese melted (about 30 minutes).
I ate that about 3:00 PM watching the Olympics. So, I really didn't feel like making dinner, later. I just kept watching TV. I hope the mussels can last one more day!
I finally fell asleep, woke up and turned the TV off and went to bed (forgetting to set the alarm).
