A Different Sunday Supper

I woke up on Sunday morning at 7:30 AM. The sheets and blankets still smell good, so I was in no hurry to get out of bed.

When I finally did get up, I posted the Blog entry and then made a big breakfast! I made a pancake batter we've used since Jake was small and let that get happy while I fried up four pieces of thick bacon. The coffee maker is bubbling away with a four cup load. Life is good!

Well, "life is good" may be over the top. It's raining outside. It wasn't supposed to rain until this afternoon. So, I either get wet or change the menu for Sunday's supper. Hmmm...

I made all twelve pancakes and took the four best ones for me. The rest I sailed out the back door to the birds. After breakfast, I poured most of the bacon grease into my cup in the fridge and took out some pork chops to thaw.

I talked with Melissa in the afternoon and then my friend B___.

About 6:00 PM, I started dinner. I fried all four pork chops in the remaining bacon grease and then set two aside to cool. The other two I deboned and cut into cubes. I added the meat to some Chop Suey vegetables and warmed that while I made some rice.

I made a bowl of it, topped it with soy sauce and went to watch my Sunday shows. The Chop Suey was excellent, BTW. During a commercial break, I put the left over rice, pork shops and the Chop Suey into the fridge. I went to bed at 11:00 PM.
