Tuesday's Tale

I was reminded Monday night making the pork loin that I never got the third smoke detector for the house, so I went to Home Depot at lunchtime and picked it up. I installed it after work.

I changed clothes after watering the mums in the mailbox garden, did a little of this and that and then took a break and called Lu (she had called and left a message earlier in the day).

I confessed to buying a motorcycle and she said she is contemplating buying another horse.

I was sick of seeing those Japanese eggplants (none of you helped, I might add). Not knowing what else to do with them, I cut them into 1/4 inch rounds and fried them in butter.

Note: Do not listen to Jake! It might just be me, but even the Japanese eggplant skin is tough and bitter (to me anyway). Other than that, dinner was good!

I watched taped TV shows and went to bed around 10:00 PM.

  1. do you cut the eggplant and soak in salt water? the salt will remove a lot of the bitterness

  2. I bread and fry eggplant (not Japanese eggplant) all the time. I love it! It's just the skin that I think tastes too bitter and tough. But, thanks for the suggestion. I'll try it next time and let you know.
