Monday Moanin'

OMG! I couldn’t believe my eyes when I looked out the window Monday morning!! There is a ton of snow out there. As I said in a comment, the Channel 4 weather guys said we got 8.2 inches of snow (they upgraded that to 10.2 by the evening news). My guess is the predicted freezing rain that we DIDN'T get (Thank God!) had transformed itself into a lot of snow.

Could I even get out? Well, I figured, we’ll see...

I did get out, but it took five tries. I'd back up until the wheels started to spin, pulled forward and then did it again (over and over). My neighbor was plowing his driveway, so his wife could get to work.

It took almost an hour to go the ten miles to work and I never saw a snowplow or salt truck. Roads were still just two tracks on the way home, too.

I did get a nice surprise when I got home. My neighbor had plowed my drive! I went over to thank him and offer him some money for gas, but nobody was home.

Being preoccupied with the snow, I hadn’t taken anything out for dinner (I forgot to make lunch as well this morning, so I just grabbed an apple on the way out). So, I ended up warming a can of Dinty Moore Beef Stew. As an afterthought, I cooked half a bag of wide egg noodles. Why, when there’s already a starch (potatoes) in the stew? Because I really like buttered egg noodles!

When everything was ready, I added butter and a little dried parsley to the noodles and put half of them in a bowl. I topped that with half of the beef stew. The leftovers went into containers and into the fridge when they cooled.

I ate that watching TV, but went to bed early, beat.

  1. Don't know the totals yet but we got a ton of snow, my pool driving board is covered up in snow and the cherry on the ckae of my day is the starter went on our snow blower so my son and husband took turns shoveling the driveway, we have a horseshoe driveway but they only did straight back. I paid my neighbor to do the entire driveway last big snow fall and my husband says to just let our son do it, but in an effort to save time not money and to make things easier for everyone I will give him a call later. Glad you didn't get the rain. I was so hopeful it was getting to be spring and then this. Guess that's what I get for living in Minnesota. All I can say is this better be an awesome Spring/Summer, I am so due!!!!!! By the way buttered noodles was the only thing I kept down over the long weekend. I love them too so does Little Carl oops I mean my son Carl, who is bummed cause all these schools are closed but not his.

  2. Bummer about the snow blower. I'm thinking in Spring, when they go on sale, of buying one myself. I can't keep depending on the goodwill of neighbors.

Um, about that Spring thing, I just saw a report from the National Weather Service predicting an "unusually cold Spring for the mid-west and north-east" this year...

I made Grandma's tuna and peas for dinner last night and served them over the rest of the butter noodles.
