It was below freezing on Tuesday morning, but it’s supposed to get to 38 degrees for a high today, so the snow should continue to melt.
I had a last minute appointment to meet a vendor at my old building at noon. I left there around 1:00 PM so, in spite of having brought a sandwich and an apple to work, I went home and had some soup for lunch.
When I got home after work, I emptied the dishwasher that I had turned on at lunchtime. I called and talked to Sadie and then Lu. Sadie said the crocus her mother had planted are starting to bloom!
I ate some of my “diner dinner” leftovers for supper. Since I didn’t have to cook tonight, I decided to go ahead and make that rice pudding. I combined my leftover white rice (about 1 1/2 cups) with 1 1/2 cups of milk, 1/3 cup of white sugar and 1/4 teaspoon salt. I cooked that over medium heat until it was thick and creamy (maybe 15-20 minutes).
Then I stirred in another 1/2 cup of milk, one beaten egg and 2/3 cup of golden raisins. I actually had some golden raisins, although I can’t remember why I bought them. And, the rice puddings I remember just had regular raisins. I cooked it two minutes more, stirring constantly. I removed it from the heat and added one tablespoon of butter and 1/2 teaspoon of vanilla extract.
You are supposed to serve this warm, so after it cooled a bit, I ate a small bowl. Excellent! But, somehow, I thought that cinnamon was involved (maybe they sprinkled it on top).
I watched some taped TV (I missed Jeopardy, dammit, and forgot to tape it) and then switched to a magazine that came in today’s mail. Then I went to bed.
