I woke up at 6:00 AM on Easter Sunday, hungry. I’d probably been dreaming about apple pie and cheddar cheese. So, I went outside and harvested some chives (they are about 8 inches tall already). Back inside, I scrambled up three eggs, added the chives and salt and pepper and cooked them. I topped them with American cheese and ate a delicious breakfast.
I went back to my bed and book. Lu called around 11:00 AM to wish me a Happy Easter. Then my brother Joe called at 12:30 PM to say the same.
I ate the rest of the potato salad for lunch. I washed the bedding and my work clothes. Then I re-made the bed and went back to my book. I swear, there is nothing better than clean-smelling sheets!
About 5:00 PM, I started to make my lamb chops. I cut up about a cup of fresh mint, a cup of fresh oregano and six cloves of minced garlic. Then I actually read the recipe and realized they had to set overnight! So, I couldn’t have made them yesterday (for Jake and Carla) and I can’t make them today! I put them on a half-sheet pan, covered them with cling wrap and stuck them in the fridge.
Fortunately, Jake and Carla had brought me some cabbage rolls and rice, so I warmed that up for my dinner (Yumo!)
I watched my usual Sunday night shows and went to bed at 10:00 PM.
