Tuesday's Tale

It was another chilly, rainy day here on Tuesday in Southeast Michigan. It’s been consistently about 20 degrees below average here. I had taken the garbage out to the road the night before and this morning, I was glad!

When I got home after work, I finally got around to emptying the dishwasher. I put in the few dishes and silverware I had soaking and washed my skillet. Then I went in to watch the evening news.

I called my buddy B___ to see how he was doing. During our conversation, he asked what I had for dinner. I told him I hadn’t made it yet, but planned on spaghetti with meat sauce. He reminded me that it was almost 7:30 PM, but I told him I had plenty of time.

So, after we hung up, I got started. I sautéed hamburger, sliced Portobello mushrooms and a diced red onion in olive oil. I hand-crushed a 28 ounce can of whole tomatoes and added that when the hamburger was browned. I added in some dried basil, oregano red chili flakes and thyme and then seasoned it with salt and pepper. I taste tested it and thought it ws a bit thin. So, I added an eight ounce can of tomato sauce. I let that get happy while I made some fat spaghetti pasta. I cooked that al dente and then added it to the sauce.

I plated a big bowl of it, topped it with fresh-grated Parmigiano Reggiano and wandered in to watch a taped movie. When it was finished, so was I. I put away the leftover spaghetti and went to bed.
