I woke up late on Thursday and had to hustle to get to work on time. I didn’t take in my candy as I know the ladies I work with are on diets and I didn’t want to tempt them.
It was cold and still a little windy, but no rain for a change. So, I made myself take my morning walk outside again.
I stopped at Home Depot at lunch time to price out stuff for the next possible project. Then I stopped at the Chinese take out and got some chicken fried rice for my lunch. I ate that at home and then headed back to work.
My afternoon walk was warmer, as long as I stayed in the sun.
Once I was home for good, I started the Wednesday night wash (delayed due to washing the bedding by necessity yesterday). Then I donned some rubber gloves and installed the headlight. It was a pain (it always is – there’s no room in my engine compartment) but I finally got it. I was back in the house by 6:30 PM. I watched the end of the evening news.
For dinner, I used last Sunday’s dinner to make myself a Reuben Sandwich. I cut off thin slices of the corned beef (not hard when its cool) and used that to cover a handful of sauerkraut from a bag. I heated that up in the microwave.
Meanwhile I buttered one side of two pieces of rye bread. Here was my only problem: I couldn’t find any thick-sliced rye bread at Kroger’s so I ended up with Beefsteak Rye, which has a good flavor, but is way too thin for this application.
I put one slice on my skillet, butter side down. I spread Thousand Island dressing on that and added the warm corned beef, sauerkraut and two slices of Swiss cheese (in that order). I topped that with the other slice of bread.
When the first side was grilled, I carefully (if not that successfully) flipped the sandwich over and toasted the other side. It was like making a messy and willful grilled cheese sandwich. I plated it when both sides were toasted, cut it in half and had a delicious dinner.
If I thought I could have eaten it, I would have made another! Instead, I cleaned up all the scattered small bits of sauerkraut (I told you it was hard to flip) and washed the skillet, knife and cutting board.
I hung up my pants and shirts and folded the socks, shorts and t-shirts. Then I put everything away. I was tired and didn’t feel like getting into anything, so I watched a couple of taped shows and then went to bed around 10:30 PM.
