Monday

I was puzzled when I woke up on Monday, because they kept talking about hazardous fog warnings, but there wasn’t any fog. I drove to work in the morning twilight in clear air.

But when I took my morning walk at 10:00 AM, the fog had rolled in. It was like walking in a rain cloud and my coat and pants were wet when I came back in.

I decided to go with Jake’s suggestion and use my thin bottom round steaks for fajitas. So, at lunchtime, I went to Westborn and picked up some things I would need. I got an onion, a red and a green bell pepper, a jar of medium heat salsa and some flour tortillas. I also picked up a small package of Westborn fajitas seasoning.

I have never made or even eaten fajitas before so I looked it up on the web and found how to make them, how to fix them and a recipe for the seasoning that Carla said she used. But, it made a lot and I didn’t know if I would even like them (although Jake described them as the “thinking man’s taco”) so I bought the little packet (about two tablespoons).

Then I stopped at CVS and picked up my Celebrex prescription and left, $90 bucks US poorer (Sigh).

The fog was lighter on my afternoon walk, but it was still persistent.

I walked out of the office to go to the bathroom about 4:00 PM and had to squeeze by a ton of people (so many so that that I nearly knocked down the building’s Christmas tree!)

When I walked back, they were still there! But, this time I noticed our CEO, the COO and the head of Marketing were standing there, too. Each acknowledged me in their own way. Evan nodded, Doug smiled and Dean smiled and nodded (but he’s the head of Marketing and would).

This ain’t my first rodeo and I know what a dog-and-pony show is, so I went back to the tech room. I called Michelle after a while and asked if they were still there. She said, yes, so I told her to go out and tell them to go away. She declined, saying something about needing her job.

Finally, about a 1/2 hour later, Michelle came back to tell me they had left (I had kept checking and they were still there). So, I went back to work.

Did you ever spend a half an hour talking with IT techs? Don’t!

I drove though misty fog to get home after work.

Before I even treated the cats, I took that steak out to warm to room temp. I did treat the complaining cats and then took the garbage to the road.

When the steaks were ready, I dusted them with the seasoning on both sides. Unfortunately, even though I know better, I causally rubbed my left eye during this process and spent the rest of the night tearing up.

I julienned the peppers and an onion and softened them in canola oil over medium hot flame. When they were ready, I added my pre-grilled steak that I had cut across the grain into 1/4 inch strips.

While they were warming, I warmed two flour tortillas in the microwave.

So, I plated my dish. I put a warm tortilla on a plate, added the steak, peppers and the onions, topped them with sour cream, a little shredded sharp cheddar cheese and the salsa and some sour cream.

OMG! It was so delicious I cried (or maybe it was the seasoning in my eyes, LOL)

I ate another and, then when they cooled off, I put them in a baggie and went to bed.
