I woke up almost every hour on the hour last night. So, I made myself stay in bed until after 7:00 a.m. on Sunday.
I made a cup of coffee and toasted some of that Ciabatta
bread. I ate that watching the morning news.

Finally, the news was over and I got to work. My brother Jim
had called me yesterday, asking for Jeremy’s new address for their Christmas
cards. I had to admit I didn’t know it. When I asked Jeremy for it so I could send
his birthday card, he said to just send it to the Port Huron house. So, that’s
what I told Jim.
But, that reminded me that I haven’t filled out my Christmas
and December birthday cards yet. So, I got the cards I had bought from Forgotten Harvest,
printed off my labels, and grabbed another cup of coffee and got started.
It took a while. I wish I could say it was because I had so
many friends (I don’t) but I have a large family.
After I finished, I got a package ready to mail. Then I
shaved, showered and got dressed for town.
I went to that little grocery store on Joy Road and Beech
Daly and got two Fuji apples. Then I went to the CVS in the same strip mall for
more alcohol wipes. By that time, it was after 12:00 p.m. so I went to the Post
Office and mailed my cards and the package.
Back home, I started next week’s breakfasts. I was making
steel cut oatmeal with apples and cinnamon in my round slow cooker. I love
steel cut oats, but they take so long to cook that I rarely eat them.
So, I coated the inside of the slow cooker with cooking
spray. I peeled and cored the two apples, then I cut them into 1/2-inch pieces.
Into the slow cooker they went! I also put in 1 1/2 cups of milk, 1 1/2 cups of
water, 1 cup of steel cut oats, 2 tablespoons of brown sugar, 1 1/2 tablespoons
of butter (cut into 5-6 pieces), 1/2 teaspoons of cinnamon and 1/4 teaspoon of
salt.
They were not in the recipe, but I also added 1/2 cup of raisins
and 1/2 cup of chopped nuts (I thought I had some walnuts, but they turned out
to be pecans). I stirred everything together, then I turned the slow cooker on
low and set a timer for seven hours.
I went out back and refilled the feeders. Then I came in and
changed clothes. I started the last load of weekend wash. Next I cleaned up the
kitchen. I did my usual Sunday morning chores (a bit late) and then decided to
take a nap.
It was after 5:00 p.m. when I woke up, so I started my
Sunday supper. I had a few baby red skin potatoes, so I quartered them
unpeeled. I peeled and cubed two russet potatoes and added them to the pot. I added
some salt and water and put than on to cook.
I warmed up a jar of turkey gravy and stuck some Pillsbury
Grands biscuits onto a parchment paper-lined half sheet tray and into a
preheated 400 degree oven.
When the potatoes were done, I mashed them with some butter,
milk, dried parsley and one egg.
I put four slices of the turkey on a plate, along with a
bowl of frozen sweet corn and stuck that in the microwave. I pulled the
biscuits out and plated my dinner.
Other than the honey glaze, it was excellent!
I watched some DIY TV shows until the slow cooker was done. It
smelled delicious! I shut it off and took the top of so it could cool a bit.
Then I put the oatmeal into four containers and stuck them into the fridge. I
filled the slow cooker liner with water and left it to soak overnight.
I was tired of watching TV, so I switched to reading until
bedtime.

ReplyDeleteSeven hours seems like an awfully long time to cook oatmeal, steel-cut or otherwise. What’s the taste/texture difference between that and 40-minute steel-cut oatmeal?

@ Jyl: I didn't taste a noticeable difference. But, then again, i don't normally put apples in my oatmeal.
