It was raining on the way into work on Monday. Around 9:00 a.m., it started raining hard!
Luckily, it stopped around 11:00 and the sun came out. That allowed it to finally warm up into the 60's.
In the afternoon, the wind picked up. And, by the time I was headed home, it was sprinkling again. Sigh...
I made my shrimp dish for dinner. First I peeled and deveined them. I sauteed the shrimp in olive oil with some salt and pepper. I cooked them until they were pink (about two or three minutes) and then set them aside.
I cooked a pound of spaghetti and drained it, reserving some of the pasta water. I whisked together the zest of one large lemon, the juice of two lemons, 2/3 cup of olive oil and 2/3 cup of grated Parmesan cheese. I tossed the pasta with the lemon sauce, shrimp and some of the reserved pasta water. I topped it with fresh basil
Sidebar: This is a Giada recipe and she also topped hers with fried capers. But, it was getting late, so I skipped that.
This was EXCELLENT!
I watched TV until bedtime.
