Captain! I need your help. I am in a far away land and require the pancake recipe from the old, green, nasty ass book in your collection. You know the one, right? It's like the best pancake recipe ever. I've hidden this comment in an old post in the hopes that you will discover it and post the answer. You must post the answer here because I have no access to email. Well I guess that isn't entirely true, I mean I could log in but that would mean entering a password in an unknown computer which is all around bad. So please - find it in your heart to post the recipe. Thank you!
2 cups flour 4 teaspoons baking powder 1 teaspoon salt 1 egg, well beaten 1 3/4 cups milk 1/3 cup oil or melted fat
Heat griddle while mixing batter. When griddle is hot enough, drops of water sprinkled on it will bounce.
Mix dry ingredients thoroughly. Combine egg with milk and fat. Add to dry ingredients and stir only until combined. Batter should be somewhat lumpy.
For each pancake, pour about 1/4 cup batter onto hot griddle. Cook until edges become slightly dry and bubbles form on top. Turn and brown the other side.
