Sunday made Roast beef hash out of the frozen leftovers from the weekend before. My ever-helpful Webmaster added my recipe to "Misc.," BTW. While I had the time, I also made a pork tenderloin stuffed with Italian sausage, apples and crushed walnuts. Didn't eat it (oh well, I did have just one slice to taste it) but froze half and saved the other half for Monday night's dinner.
So, yesterday, while I was washing the floors (leftover weekend chore I never got to) I also baked the old standard green bean casserole (you know the one - cut green beans, mushroom soup and those French's onion rings - comfort food) and made garlic mashed potatoes and gravy. Warmed up three slices of the pork, made up a plate and watched TV.
