Jake and Carla decided that, since I'll be gone for Easter (going to Virginia for the weekend) we'd have Easter dinner yesterday. So, after my morning errands (hair cut, shopping, picking up more mulch, etc.) I acted as prep chef and cooked 2 pounds of redskin potatoes, cubed and cooled them off and 10 slices of bacon for something called Texas Country potato salad. I also made some shrimp cocktail for an appetizer while we worked.
They got here around 5:00 PM, Jake fired up the grill and Carla started making the salad. It's basically potatoes, hard boiled eggs and crumbled bacon with a mayo sauce. Carla added celery for some crunch. Jake cooked the delmonico steaks I'd thawed out Saturday morning and then we ate. A bit non-traditional, I suppose, but a great Easter dinner, none the less.
