It was even colder today, but not nearly as windy. So, being outside wasn't as bad.
When I got home, I changed clothes and went back to my weekend cleaning. I got out the electric sweeper and cleaned the bedroom, hall and the office. I spent some time on the internet and then went to make dinner.
At the last minute, I changed my mind about the roast beef hash. I took the rest of the roast beef and cubed it and cut all the carrots left in half. Then I peeled and sliced a medium-sized onion. I put all that into a buttered glass baking dish. Next, I took the au jus and heated it in a saucepan, then thickened it with cold water and cornstarch to make gravy. I poured that into the glass dish and topped it with the leftover mashed potatoes.
I put it in a 325 degree F. oven for 1 1/2 hours and: TA DA! A high-end Shepherds Pie!
I ate about half of it (in my defense, by the time it was done I was STARVING) watching my taped shows and went to bed around 11:00 PM.
