Thursday, late into the night

I made two stops on the way home from work Thursday night. First I went to the bank and the ATM for some cash, then I stopped at Kroger's. Since I am going to Lake Orion tomorrow, I want to WOW my Mom, Cora and my brother Carl with some "CaptainK" type food.

So, I picked up two slabs of baby back ribs, 3 pounds of some tiny redskin potatoes, radishes, an English cucumber, lemons, a red onion and some apple juice. My plan is to make my famous CaptainK Bourbon Baby Back ribs, a classic American potato salad (but with a twist) and my still experimental radish and cucumber salad. The only problem is the number of people who may or may not be there. But, they can eat their own food, I'm thinking...

So, I get home and walk through the front lawn. It was drizzling this morning, cloudy most of the day, but sunny after about 3:00 PM. I got nothing wet on my shoes, so I figure I can safely cut it without having to rake it. I took the groceries inside and put them away, changed clothes, put a load of clothes in the washer and started cutting the lawn at about 6:15 PM.

I did have to cut the front lawn twice to chew up the grass clippings, so by the time I was done, it was almost 8:30. I moved the clothes in the washer to the dryer. Then I took the redskin potatoes and quartered them. I put them on a big cookie sheet, drizzled them with olive oil and sprinked them with just a little salt and a lot of fresh chopped parsley. Into the oven (at 400 degrees F) they went, with the timer set to check on them in an hour.

Here's my plan. As I have stated here before, Jake's potato soup consistently tastes much better than mine (and mine's damn good, BTW). He claims it's because he roasts his potatoes first and that brings out a slightly different flavor. So, what if you made potato salad using roasted potatoes, instead of boiled? It is, admittedly, an experiment and I did make sure I have enough potatoes I can boil tomorrow morning if it flops.

Now, onto my dinner; I am tired of the hamburgers, so I boiled some potato and cheese pierogies, and then fried them in some butter with sauted onions (the famous Sue Plesz method). I topped them with some salt and sour cream and ate them watching TV. When they were finished, so were the roasted potatoes and the clothes in the dryer.

I put the potatoes in a bowl lined with paper towels (to wick away any excess oil) and put them in the fridge. I hung up the clothes and went to bed.
