I awoke, cranky and out of sorts at 4:00 AM. I ignored my brother and son's warnings and reheated yesterday's coffee. I ate the rest of the pot roast cold, topped with horseradish, for breakfast.
It was a grey, gloomy day that seemed to threaten rain (although the Weather Channel didn't mention it). I sat on the couch and read more of Moby Dick, covered with a throw and drinking old coffee.
Luanne called and we caught each other up on what's going on. Stacey (Sadie's younger daughter) had her second child on Friday. It was a boy and they are calling him Caleb Benjamin. Cool name, but he'll probably change it when he's older...
After I shaved and showered, I started the last load of laundry for this weekend.
Around noon, the sun started to peek out. So, I got out the lawn tractor and started cutting the front and back lawn. No, the grass is not that long yet, but the leaves and black walnuts are beginning to pile up.
It did sprinkle a little while I was cutting the back lawn, but I persevered and it stopped. After the lawn was cut, I went and picked all the ripe tomatoes. It was a good amount, but not enough yet to make into sauce. So, I stuck them in the stock pot with some water to wash off the insect dust and will deal with them later.
I went out and blew off the porch, garage apron and most of the driveway. The old widow woman across the street drove in, beeped her horn and we talked for a bit.
I went inside and it was about 3:30 PM. I thought I'd lay down and take a nap, but I couldn't fall asleep. Just as I was about to get up in disgust, my friend B___ called. So, we chatted for a while. He was surprised when I told him I'd cut the grass as he said it had been raining there off and on all day.
I watched a few of the taped weekend cooking shows and then got up to make my own dinner about 6:00 PM. I'd thawed out a pound of ground beef and was debating of what to do with it (Tacos? Enchiladas?) It all seemed too fancy and too spicy.
So, I saut�ed two small yellow onions in a big saucepan. When they were soft, I added some minced garlic. Then I put in the ground beef and browned it. Finally, I put in one cup of long grain rice and two cups of water. I brought it to a boil and then simmered it for 15 minutes with a lid on.
It wasn't until I was serving it that I remembered I also used to add celery and mushrooms. Ah, too late now...
I topped it with soy sauce and went it to watch my Sunday night shows. I went to bed at 10:30 PM.
No chicken slop?
