Sunday, Sunday...

I woke up late (at the amazing time of 9:30 AM!) on Sunday. I'm betting getting up to the alarm at 5:30 AM starting on Monday is gonna be tough! I hurriedly filled in the Blog and then showered.

I had to go out to refill the birdfeeder. It was 11 degrees F. with a stiff wind, so I was glad I'd thought to wear a hat!

Lu called at 3:00 PM to tell me they were just leaving Port Huron, so I figured they'd be here around 5:00 PM. But, no, not Speedo! They were here before 4:30!

We chatted a bit while they wound down from their trip. They said they had a great time with Jeremy's family. Then Lu started making her "Pumpkin and Black Bean Soup."

I played sous chef and fine-diced half of a red onion and two cloves of garlic. Lu sauted that in my Dutch oven while Sadie started making an elaborate salad.

The soup consisted of one can of pumpkin puree, 1 1/2 cans of rinsed, drained black beans, one can of diced tomatoes, balsamic vinegar and some chicken stock. She pureed that with my immersion blender and then let it simmer.

We ate our salads while the soup cooked down. It was a great salad, BTW, but far too large a portion (for me, anyway).

Next we ate the soup. I was a bit discouraged because my "Rustic Italian Bread" loaf had started to mold. But, Lu put out some crackers and a cheese ball to take its place.

The soup was very good and I managed to eat everything in my bowl (which surprised me). We let the rest of the soup cool down while we cleaned up.

Then we played cards (Rummy) and I won (which also surprised me!) Next we tried Scrabble, and Lu won (which didn't surprise me at all, lol.)

I read a book in the living room while they started packing up and taking stuff from the office to the downstairs staging area. Then Lu came in and also began reading. I was in my recliner and she on the couch. I asked her where Sadie was and she said reading in bed.

I called it quits at 10:30 PM (Hey, I have to get up at 5:30 AM and go to work tomorrow). I read in bed for a while and then fell asleep.

  1. So...what does the soup taste like?

  2. Ummm, its mostly a pumpkin taste, with a little heat from the cumin and a back taste of the black beans.
