Eggs-actly

Again I woke up near 8:00 AM. This must be the time God really wants me to wake up, not 5:30 AM. I posted the Blog (nothing to that as I didn't do anything) and then wandered out into the kitchen. It had rained hard overnight (about an inch in the rain gauge) but wasn't raining then.

I turned on Sunday Morning Over easy and sat on the couch until it ended at 11:45 AM. Then I went and shaved and showered.

My back still hurt, so I mostly read or watched TV. About 4:00 PM, I realized I was hungry, so I finally made the Creamed Eggs on Toast (it was raining again, BTW).

I peeled and chopped four hard boiled eggs and set them aside. I pour out 1 1/2 cups of cream and let that come to room temperature. I melted 1/4 cup of butter over medium-high heat, then stirred in 1/4 cup of flour. I whisked the roux until it started to turn light brown. Then I slowly whisked in the cream.

I turned off the heat and added salt and pepper to taste, then I stirred in the chopped eggs. I pour some of it over two pieces of toasted rustic Italian bread. So simple, yet very, very good!

Later, I watched my Sunday night shows and then went to bed at 11:00 PM.
