Holy Thursday

I woke up on Thursday (wide awake) at 4:30 AM. That's just so not cool! I posted the Blog entry and the many pictures I took of the lasagna adventure. Then I went back to bed (disturbing both Caley and Scruffy) and tried to fall back asleep.

That did work and I woke up late on Thursday. I started the Wednesday wash and then thought about breakfast. So, instead of a traditional breakfast, I ate the other half of the winter melon, heavily salted.

I loved it!

We broke a record temp today and so, late in the day, I went out and raked the side lawn. Luanne called about 6:30 PM and we chatted a bit.

After that, I got into making dinner. I had thawed out a pound of hamburger (from that quarter cow I buy every year) and the last pound of the ground turkey I'd bought a few weeks ago on sale. I figured that the grease of the hamburger would offset the lean turkey meat. To that mixture, I added 3/4 cup of bread crumbs, two eggs, 3/4 cups of water, 1/3 cup of ketchup and one packet of Lipton's onion soup. (Hey, we're talking comfort food, here. I didn't say this was a gourmet meal!)

I formed that into a loaf and put it on a rack over a cookie sheet (it keeps the fat from staying in the meatloaf. Later, I wished I'd lined the cookie sheet with tin foil.) I put that in the oven (preheated to 350 degrees F.) and set the timer for one hour.

Meanwhile, I took the leftover mashed potatoes and added an egg and some flour to them. I fried them in some canola oil to make Fran's potato cakes.

I ate dinner watching TV. I added some more ketchup, but, over all, it was good!

I went to bed early which was a mistake as I woke up too early Friday morning.
