I woke up on Thursday, feeling like crap. But, I soldiered on. I shaved, showered and got dressed for work. Then diarrhea set in...
So, I emailed my boss, took off my clothes and went back to bed. I ate light throughout the day (a grapefruit for breakfast, some cantaloupe for lunch).
I mostly slept through the day. I called my friend B___ after 7:00 PM to see what he's been up to. We chatted for a bit and then when we hung up, I started dinner.
This is an old Rachael Ray recipe I've used for years. In a large, shallow skillet over moderate heat, I melted some butter. I added one chopped shallot to the pan and sauteed them for two minutes. I then added a tablespoon of flour to the butter and shallots and cooked it a minute longer. I whisked in a jigger of cooking sherry and cooked the liquid out. Then I whisked in beef consomme in a slow stream. I brought the sauce to a bubble and allowed it to simmer over low heat until I was ready to serve the sandwiches.
I piled half of the deli roast beef loosely across on a half sheet tray. I seasoned the meat with Montreal grill seasoning (or you can use salt and black pepper). To assemble, you use a pair of kitchen tongs, dip meat into the loose au jus sauce and pile into hoagie rolls. Then you set ramekins or cups with extra dipping sauce along side of the sandwiches. I stayed up late (because of the off and on napping) but finally fell asleep.
