I made a snack on Tuesday at lunchtime for later in the evening. I got some more prosciutto last week, thinking I'd get some melon again (that was great). But time has passed and no melon has been forthcoming!
Now I forget who I saw do this (I think it was Jamie Oliver) but here's what I did. I cut up some fresh feta cheese into 2-3 inch long, 1/2-inch squares. I sliced some basil leaves into about the same sized strips.
Then I took each piece of prosciutto, put a chunk of the feta at one end, topped it with a basil strip and rolled them up. I stood each one up in a glass bowl, then I filled the bowl about 1/4 full of olive oil. I put them in the fridge for tonight and warmed up some faux goulash for my lunch.
After work, I decided it was really time to do something about the cat hair around here (see Monday's post). Then it dawned on me! With all the first-time grass cutting over the weekend, I never really cleaned the house!!
So, I swept and vacuumed all the rooms. Next, I washed the main bathroom floor and fixtures. I took a break then and watched the news while the floor dried. When I could use the bathroom again, (important, lol!)I washed the kitchen floor. I finished at 7:20 PM.
Supper was supposed to be a roast beef sandwich which I made (with the horseradish sauce). But, as I was eating it, I grew more and more concerned with an "off" flavor. I checked and I had bought it on April 5. My handy-dandy chart says deli meat is good for five days in the fridge. Not wanting to poison myself, I threw out the rest of the sandwich. Dammit! I hate that!!
I started watching taped shows. I was still awake at 10:00 PM and now hungry, so I tried the prosciutto roll-ups. Hmmm... not bad. The salty cheese and salty ham was a bit more intense than the prosciutto and melon (I think I liked that sweet and salty taste better). But, the basil was a nice counter-point. It was, however, a lot more "heavy" flavor, so I could only eat three of them.

I'm not sure why, but I stayed awake until 1:00 AM.
