Tuesday morning, they kept saying on the weather that is was
going to get above freezing with lighter winds than yesterday (we had sustained
winds of 20 MPH with gusts up to 49 MPH all through the day and most of the
night). But, it sure didn’t feel like it!
I did take both my morning and afternoon walks outside, but
I had to remind myself over and over not to hunch up against the cold wind.
I had to go to CVS at lunchtime, so (you guessed it) I got
some chicken fried rice, too.
In the afternoon, Vicky asked me if I wanted to try some of
her mother Evy’s spaghetti. Well, I had an apple for a snack, but spaghetti
sounded better. So, I warmed it up in the microwave. I was admittedly surprised
that it tasted a LOT like my own mother’s spaghetti, back in the day!
When I got home, I retrieved the garbage can and then went
inside. I treated the cats, changed clothes and then started prepping for
tomorrow night’s dinner. Yes, I said tomorrow night. I made a box of Uncle
Ben’s wild rice, but substituted chicken stock for the normal water. Then I
cleaned and sliced two boxes of crimini mushrooms.
When the rice was ready, I took it off the burner to cool.
Then I sautéed the mushrooms in the 12-inch skillet with 1/4 cup of butter.
When they were ready, I let them cool a bit. Then I took about a 1/4 cup of
them and chopped them up. I added them to the rice mixture and folded them in.
I heated up the rest of the chicken fried rice for my dinner
(as well as sneaking some of the mushrooms, lol). Then I put my prepped food
into containers and into the fridge.
Instead of watching the State of the Union Address
(unpatriotic I suppose, but I never watch them. I listen to the recap on the
news the morning after), I watched the first Lethal Weapon and then went to bed
at 10:30 PM.
