Finally Friday



It was warmer still on “Finally Friday.”

I did my Lenten penance by eating another fish and chips lunch at the Time Out. Unfortunately, my favorite waitress wasn’t there. Fortunately, the food was still excellent.

Vicky gave me another Puerto Rican dish to try for my dinner. She couldn’t remember the name of it at the time, but she described it as “yellow rice with corn and chunky beef meat with potatoes. The meat is like a beef stew.” I asked her to ask Evy what it was called and let me know tonight.

When I got home, I took a few moments to walk on the south side of the garage to check on the possible arrival of Spring. Sure enough, my hyacinths were about two inches tall!

I also noticed that the blocks that had surrounded the mailbox garden were all tumbled down, probably due to the freezing and thawing events of this past winter.

Once inside, I treated the cats (there seems to be an uneasy truce between them) and changed clothes. Then I went through the fridge, pitching things that were close to the expiration date or, in some cases, past it. I recorded them and then went through the Kroger flyer, making my grocery list for Saturday morning shopping.

I watched the evening news until 7:00 PM and then warmed up dinner. In the container, the yellow rice and corn (I don’t think I’ve ever seen yellow rice before, did you?) were separated from the bag of mostly beef chunks and a few slices of potatoes in gravy. Vicky had explained that was so the rice wouldn’t be soggy.
By then, Vicky sent me a text so I know it was called: Arroz con maiz y Carne guisada. And, before I forget, you were supposed to top it with avocado slices, but I passed on that.

And that reference to beef stew was misleading (at least for me). I’m used to beef stew that is mostly root vegetables with some poorer cuts of meat. Here, the meat was the star! It was, as I said, mostly meat with a few slices of potatoes.

It was delicious and unusual, with that strange flavor of the “spicy without heat” seasoning. I really liked it but know better than to ask for the recipe, LOL!

My nephew Jim had asked me back at the family get together in October if I had ever seen the show “Duck Dynasty.” It’s a reality show about a Louisiana family (or maybe extended family, I’m not quite sure) who make duck calls. I said no at the time, but noticed a new season had started this week so I taped a show. I watched it tonight. It was interesting, mostly because I know people like that, LOL!

I went to bed at 10:30 PM

  1. I bet she uses achiote oil for the rice and that's what gives it the yellow color. It's great stuff! There's a Latin market sort of near you that carries the ingredients. Carrier pigeon me for details.
