It was so warm out (69 degrees F. was the official
high) that both my morning and afternoon walks were taken without a coat!
I drove home at lunchtime (with the car window down), making one quick stop at
Kroger’s. I wanted to turn the rest of the roast beef leftovers into beef
noodle soup and found Sunday night I was out of Kluski noodles. They are the
only egg noodles I have found so far that can stand up to freezing, thawing and
reheating without turning to mush.
Once home, I made a BLT for my lunch.
It was about 3:00 PM when the word started
trickling in about the bombings at the Boston Marathon. One of the sad things
about getting old is remembering things. And, so when I heard about there being
two bombs, one after another, I immediately thought of the IRA. They introduced
that idea (luring in the first responders and then setting off a second bomb)
back in the 70’s when they first brought their bombing campaign to England
itself.
Now, I know it wasn’t the IRA. It just depressed me
that some things never change…
I got home after work, took the trash can to the road,
went in and treated the cats and was changing clothes when my cell phone rang.
It was Michelle from work. She had gone out of the room for something or
another and when she returned, everyone had left for the night and locked the door, leaving
her locked out with her purse and keys inside.
So, I drove back to work and let her in. She
apologized, but I told her not to worry as it was not everyday I got to help a
damsel in distress.
Back home again, I refused to treat the cats, which
ticked them off. I watched the news until 7:00 PM. Then I sliced off three thin
pieces of the roast beef for my dinner and cut the rest into one-inch cubes.
I steamed some frozen sweet corn and them warmed up
the beef and the last piece of the potato bacon casserole (I had taken two
pieces of the casserole into work for Vicky and Michelle to try).
While that was warming up, I mixed some mayonnaise
with horseradish as a sauce for the beef. When everything was ready, I ate a
great dinner.
I put the beef cubes in my Dutch oven with two fresh
bay leaves, about four cups of water and the au jus from yesterday. I brought that
to boil and let it simmer for a couple of hours (to tenderize the meat). I plan
on making the soup tomorrow night so after it cooled down, the whole pot went
into the fridge.
I watched an old western on the Turner Classic Movie
channel, “Winchester
’73.” It starred Jimmy Stewart, Dan
Duryea and a very young, surprisingly attractive, Shelley Winters.
When that was done,
I watched the taped Sunday night episode of the Vikings. Then I went to
bed.
