I could have used one more day of sleeping before heading back to work...
Since I had thawed out two boneless, skinless chicken breasts on Friday, I threw them away Monday morning (my neighbor's stuffed cabbage serving for an excellent Sunday supper). So, I took out two more Monday morning.
Back at home for lunch, I made a cucumber sandwich. It was excellent! Once home after work, I cut the front lawn with the push mower. I saw my neighbor taking out the two garbage cans. I felt bad (they are about as big as she is). Her old man is working like 16 hours a day on a cement job. What is troublesome is that he just had a hernia operation. But, you gotta make hay while the sun shines. Then I gassed up the Troy-built, checked the oil, etc., and cut the back lawn.
I did a nice job of it (it looks great) and finished up about 7:30 PM. Back inside, I took a call from a friend and then, around 8:30, started making my supper.
I cut the chicken into cubes and began to fry them up (using a tablespoon of canola oil and a teaspoon of butter - this was a Jake suggestion, as I was going to poach them). Then I cut up about a half pound of mushrooms and added them in. When the chicken was done (I took the biggest cube and cut it in half to check for doneness), I added the Chop Suey vegetables. While they were getting warm, I made two servings of brown rice.
I plated everything, topped it with good soy sauce and went in to watch some TV. I was beat, so I barely made it to 10:00 PM. Then I put the leftovers away and went to bed.
